Wine Notes:  Bone dry and a touch austere, with harmonious peach, citrus and mineral flavors and a lively backbone. Light-bodied yet powerful, with a lingering finish. Drink now through 2004. 2,300 cases made. (Source: Wine Spectator web site, 2002). 'CSV' is the designation for Cave Spring's top-end wines. Tasting note: The second vintage of Cave Spring's premium Riesling is an estate-grown charmer (from 20-plus year old vines). This vibrant white features fleshy peach flavours and a rapier-like lemon zest acidity that balances the hint of residual sugar on the palate. The concentrated young wine benefits from some deep leesy and complex mineral notes - it's a bit funky when you first pull the cork, fear not. Offering good value for the price, it deserves to be served with stir-fries and salads or, better yet, salmon. Put one away until 2010 and amaze your friends and yourself with the complexity of this powerful white. Score - **** (out of 5). (Christopher Waters, Vines, July/Aug. 2002) Niagara has also been having a great run with riesling, and there's an excellent example today in Cave Spring Riesling CSV 2000 ($25, No. 566026). Light- to medium-bodied and dry, it's ripe with flavours of pear and peach and a hint of mineral. Let this wine breathe a little after you open it to blow off a slightly burnt, sulphur-like quality that may have come from bottling. It's harmless and should disappear quickly.
