| Wine Notes: | This wine originates from the limestone-rich clay till soils of our Cave Spring Vineyard, located on a terrace of the Niagara Escarpment overlooking Lake Ontario, and made from our lowest yielding vines. Minimally filtered, it may throw sediment with bottle age. Decant if necessary. Produced from 6 to 8 year old vines at Cave Spring Vineyard. Approachable in its youth, it should continue to develop favourably for 8 to 10 years. Food matches: Roast of beef, duck or venison; rack of lamb or grilled lamb chops with ratatouille; peppercorn steak; dry, well-aged cheeses such as Cheddar or Parmesan.
