These are fermented primarily in small, open-top tanks with manual punchdowns of the cap, a method that gently macerates the juice and skins to extract optimal color and flavor. The lots for our 2006 Rubaiyat aged 15 months in French oak barrels, 35% new, before blending.

The 2006 Dolce is intensely fruity, driven by aromas of citrus and stone fruits, and layered with notes of honey and spice. Ripe peach and pear dominate in the nose and are complemented with notes of orange zest, dried apricot and fig. The palate is loaded with ripe and juicy apricot. It begins with a silky entry, followed by an unctuous and balanced mid-palate, and a mouthwatering, clean finish. With time we expect the emergence of the bottle bouquet, together with a subtle minerality, will beautifully showcase the fruit-forward nature of this youngster.

Wild Oak Merlot is a lush, rich, full-bodied wine characterizing classic Bordeaux structure. Small crops of intensely flavored fruit from select blocks of the 36 year old estate Behler Vineyard in Sonoma Valley provides us with rich, fleshy fruit typical of Merlot grown on this cool valley floor vineyard. A second Merlot component is grown high above the fog line along the Mayacamas ridge overlooking Sonoma Valley on our estate Nuns Canyon Vineyard. This Mountain grown Merlot provides the tannins needed to give the wine structure and complexity. Syrah is one of the most adaptable varietals, suitable for both warm and cool growing regions and both rocky mountainous and fertile valley floor soils. Wherever it is grown, Syrah dramatically expresses the personality of the terrior with its unique and variable flavor profile. In the 2005 vintage, 70% of the Syrah grapes were selected from our very own Wild Oak Vineyard, located on the fertile valley floor of Sonoma Valley. This fruit gives the 2005 Syrah its lush strawberry and mineral flavors as well as a soft, rich mouthfeel. The remaining 30% of the grapes are grown on our estate mountain-side Nuns Canyon Vineyard, growing high above the fog line on the Sonoma Valley side of Mount Veeder. This mountain grown fruit is first to ripen and is characterized by firm tannins and sweet blueberry and ripe black cherry flavors. All grapes were fermented separately in stainless steel tanks and were then aged in new, one and two year old oak (95% French , 5% American). We selected a high percentage of older oak barrels for this blend in order to allow the wine?s intense fruit flavors to shine.

Viognier, Catie's Corner, Russian River Valley (2007) Viognier is well-known for its floral and intense fruit aromas. This crisp, semisweet wine is intended to be consumed young while the aromas are powerful. The Viognier grape is temperamental, but when picked at peak of ripeness, as this vintage was, it assembles a wine low in acidity and with a deep yellow color. The highly aromatic and fruit forward nature of the grape allows Viognier to pair well with spicy foods such as Thai or Vietnamese cuisine.

F or the past 12 years St. Francis has had the privilege of producing a small quantity of old vines Zinfandel from grapes of the famed Pagani Family Vineyard located in the heart of Sonoma Valley. First planted by the family patriarch Felice Pagani in the 1880’s, this old world vineyard is dry farmed, without benefit of trellising and to this day is farmed by the Pagani family in the field blend style. Although the vineyard blocks are planted mostly to Zinfandel, they also contain small plantings of a diverse range of grape varieties including Mourvedre and Alicante Bouschet. When small amounts of these varieties are blended with the old vines Zinfandel, the end result is a remarkble red wine enjoyed by so many of the immigrant families who settled in Sonoma County at the turn of the century, very reminiscent of their red table wines from home. Sonoma Valley’s warm summer days hasten the ripening of these grapes to their peak of potential - spicy, brambly Zinfandel, peppery Mourvedre and color intensity from the Alicante Bouschet. American oak is specifically selected for its cinnamon, nutmeg and clove flavors enhancing the complexity of this treasured old vines Zinfandel.

This 2005 vintage marks St. Francis' eleventh harvest of old vine zins from the famed Pagani Vineyard. this old vine zin is crafted of fruit from grapevines first planted by the family patriarch FElice Pagani on this Sonoma Valley vineyard in the 1880's, and to this day is farmed in the old "field blend" style. spicy, brambly Zin, chocilatey Petite syrah, floral Mourvedre, peppery Carignane and intensley colored blue-black Alicante bouschet.
